Ingredients
- Chicken thighs
- 1 egg
- Heavy cream
- Plastic bag
- Almond flour
- Tapioca flour
- Baking powder
- Salt
- Paprika
- Xantham gum
- Garlic powder
- Dried oregano
- Dried basil

- Avocado oil
Today we're gonna be making a delicious fried chicken that is like a kfc dupe of their traditional recipe. This chicken is gonna be absolutely delicious, it's gonna have a nice crisp on the outside, but it's gonna be super juicy on the inside, and of course, it's keto-friendly. Coating the chicken
Okay so now we're gonna move on to the ingredients. You could use chicken thighs, or drumsticks breasts if you prefer, whatever you typically use. First wash them and pat drie them so they are nice and dry, you don't want them wet because you want the coating to stick onto them. For the coating, pour one egg in half a cup of heavy cream and mix them up. This is going to be like our buttermilk, it's just uh heavy cream egg. Next, we're going to need a bag that holds about a gallon. Next step is throwing in our heavy cream mixture and toss in our chicken thighs, and make sure that they are nicely coated. Once it's fully coated put it into the fridge and let it sit for about 30 minutes to an hour, or if you want to make this overnight you can do that too.
Preparing the breading
Our breading is going to be one and a half cups of almond flour, a teaspoon of baking powder, a tablespoon of tapioca flour, half teaspoon of dried oregano, half teaspoon of basil, half a teaspoon of cayenne pepper, half a tablespoon of paprika, half a teaspoon of garlic powder, half a teaspoon of white pepper, half teaspoon of salt, and last but not least, we have some xanthan gum. Mix all this together while our chicken is in the fridge.
Once the chicken has been sitting in the fridge for over an hour, we are going to move on to the next step. Shake off the excess liquid of each piece of chicken, and then just put them right into the breading. Next, put the pieces onto the tray and let it rest for 30 minutes before frying.
Frying the chicken
For the frying we recomend you use avocado oil because it has a smoking point of 500 degrees, but you can use whichever oil you typically use. Fill your frier about halfway so that you're able to fry the chicken in there. Once the oil is hot place your chicken pieces inside and fry them for about six to eight minutes, until it's nice and golden brown and the internal temperature is at about 165 degrees. Make sure it's golden brown on both sides. This chicken is moist, and tender, and the outside is nice and crispy. This is so delicious you guys are going to be obsessed!
You can serve this delicious chicken with a little coleslaw on the side, and a bit of sugar-free barbecue sauce for dipping, or whatever dippy sauce you like. Just make sure they are low-calories, especially if you're living the keto lifestlyle.
