Delicious Zero-Carb Tuna Patties 🐟

1. Prep the Tuna Mixture

For this recipe you can use any wild, light canned or skipjack tuna. You can also replace the tuna with wild caught sockeye salmon, if you prefer. You're also going to need some chicken eggs, one egg for each can of tuna which is 5 oz per can, and some kind of shredded cheese, like cheddar for example. Although if you cannot tolerate cheese you can omit this ingredient altogether. You will also need a cup of pork panko, which is basically crumbs made out of pork rings, and finally the seasonings. The seasoning is going to be just some garlic powder, Italian seasoning and salt.

To start making the tuna patties you first need to drain the liquid out of the canned tuna using a strainer. Next, in a mixing bowl, combine the tuna, the eggs, the shredded cheese (if using), the pork panko, and the seasonings. Mix thoroughly to your preferred texture—either smooth or chunky.

2. Shape and Refrigerate

Next, form the mixture into patties of your desired size and shape. For better consistency, refrigerate for at least 1 hour. This helps the patties hold their shape while cooking. Obviously, if you are in a time crunch you can go ahead and skip this step.

3. Cooking Options

You can cook these tuna patties in three different ways:

  • Air Fryer: Line the air fryer with parchment paper, place the patties inside, and cook at 400°F (200°C) for 12 minutes (flipping halfway through).
  • Pan-Frying: Heat beef tallow in a stainless-steel pan. Cook each patty over low heat for 3-4 minutes per side until golden brown.
  • Oven-Baked: Place on a baking sheet and bake at 400°F (200°C) for 10 minutes, then flip and bake for an additional 5 minutes.

Spicy Mayo Dipping Sauce (Carnivore-Friendly!)

Store-bought dipping sauces often contain seed oils and additives, so here’s a clean and simple homemade version:

  • ½ cup sour cream (or high-quality yogurt)

  • Carnivore-approved hot sauce (add to taste)

Mix the ingredients until smooth and vibrant in color. Adjust the amount of hot sauce to your desired spice level.

Tips and Variations:

  • Feel free to experiment with different cheeses and seasonings.
  • If you don't have pork panko, you can try other carnivore-friendly breading options.
  • For a crispier patty, ensure your pan is hot and use enough beef tallow.
